Bài 1: Phở

Pho is essentially Vietnam’s signature dish, comprising rice noodles in a flavourful soup with meat and various greens, plus a side of nuoc cham (fermented fish) or chilli sauce. A basic bowl contains beef or chicken, topped with bean sprouts, lime wedges, and fresh herbs such as basil, mint, cilantro, and onions. Depending on the restaurant or roadside stall, you can also opt for more exotic ingredients such as gan (beef tendon), sach (thinly-sliced pig stomach), and ve don (flank with cartilage). Typically eaten for breakfast, pho is priced between VND 20,000 and VND 30,000 at a local restaurant or street market in Vietnam. Pho has shown its position not only in Vietnamese cuisine but also world cuisine. Pho can be seen everywhere from street stalls to high-end restaurants.

Commonly well-known along with Pho, Vietnamese baguette sandwiches, called Banh Mi, have attracted a growing fan base around the world. The uniqueness of Banh mi not only lies within the light and crispy baguette, but also the variation of flavors Vietnam fillings bring out the most amazing flavor. Banh mi is a unique French-Vietnamese sandwich that’s great for when you’re in need of a quick meal. Priced between VND 10,000 and VND 15,000, it consists of a toasted baguette sandwich, pickled vegetables, pate, butter, soy sauce, cilantro, chillies, etc. Most banh mi sellers also offer a wide range of meat fillings, including heo quay (roasted pork belly), trung op la (fried egg), thit nuong (grilled pork loin), cha ca (fried fish with turmeric and dill), cha lua (boiled sausages), xa xiu (Chinese barbecued pork), and thit ga (poached chicken). With it reputation, Banh mi is considered to be the essence of Vietnamese cuisine. It is a must-try that even the pickiest eaters can’t resist.

I’d love to find out that you want to know about music in my country. There are many kinds of music in Vietnam: imperial court music, folk music (cheo, xam, quan ho, chau van, ca tru, ho…), classical music for refugees or Yellow Music, revolutionary songs or Red Music… But us, the new generation of people in Vietnam prefer modern music – pop music or rock heavy metal.       There are so many live concerts, from city to the country. If you live in Ha Noi, or Ho Chi Minh city, you can go to live concerts every week. You can also listen to live music in small bars, where you can hear from unknown singers. You can go to big stage, like the stadium to listen to the big stars, or your idols, even the worldwide celebrities.       In my free time, I’d like to hear pop music. During the recent years such as 2006 and beyond, Vietnamese pop music has tremendously improved from years past. Vietnamese music has been able to widen its reach to audiences nationally and also overseas. I love My Tam music. She had been awarded Best Asian Artist Award in 2012 MAMA prize. Most of her songs is about love and the lives around us. I also love her voice very much.       What’s about your favourite music? Tell me in your next letter.

Well, I’m a food lover so this question is extremely difficult, I cannot pick just one! But if I have to, I’d say Bánh Cuốn or steamed rolled pancakes is my favorite food that I would like to talk about today.

Bánh Cuốn is a popular option for diners in Viet Nam. As the matter of fact, among the well-known offerings of Saigon street food, Bánh Cuốn is consistently ranked a top choice. I believe this dish originates from the Northern region of Vietnam, the exact date and time it was first made are unknown but it seems hard to deny that Bánh Cuốn has been made for years.

Basically, Bánh Cuốn looks like a soft spring roll filled with meat. However, the recipe is much more complicated than that. You start with a steamed rice roll cooked on a pot which is covered by a thin fabric. Until the rice roll is very thin, it will then be scrapped off the pot with a bamboo stick. After that, the roll is filled with a mixture of pork, wood ear mushrooms, onions, and fish sauce.

This is my favorite dish among thousands of amazing food in Vietnamese cuisine because it is perfectly enough. From the smell to the taste, everything is just enough to make your mouth watering . This is my favorite breakfast and maybe even dinner for many Vietnamese. It is a quick and delicious day starter.

I like to eat many different kinds of food, but my favorite one of all time is Pho. Pho is already a so famous food of Vietnam, and most people will immediately think of it when we mention about Vietnamese cuisine. It is understandable that many people fall in love with Pho, because it has featuring smell and taste that we cannot find anywhere else. To have a good pot of soup, we need to have many different kinds of spices such as anise, cinnamon, etc; and the most important thing are the bones. Those bones needed to be cooked for long hours to get the sweet and tasty stock, and then we combine other ingredients. The noodle is also special since it is not like other kinds of noodle. It is made from rice flour, and it is thicker than the others. After pouring the stock into a bowl of noodle, the next step is to put on the beef slices and other toppings. I like to eat rare beef slices and meat ball, and they are also the basic toppings that Vietnamese people like to choose. We finish the bowl with some basil, coriander, bean sprout and black pepper. Besides, we can also other side dishes to eat with Pho like egg and blood in boiling stock. All of them create a harmonious flavor that can attract even the strictest eaters. Although Pho has many versions from different parts of the country, it is always the national dish that almost all Vietnamese love to eat. I have been eating Pho for about 20 years, and I will continue to choose it as my favorite food forever.
